Summer is that time of year when the cucumbers start coming in like crazy! You find yourself staring inside your fridge–filled with bucket after bucket of these cylindrical veggies–and you wonder, “What in the world am I going to do with all of these!?”
If you don’t have time to make pickles (or you just hate making them, lol)–freezing can be a great way to preserve these yummy curcurbits. It’s super easy; all you need is a knife, cutting board, parchment paper, and something flat like a baking sheet or a plate.
To start, wash several cucumbers and cut them into slices.
Next, line your baking sheet or plate with parchment paper and lay the slices on in a single layer until the sheet is full.
Pop your sheets into the freezer for 1-2 hours…
Dump the frozen slices into a freezer bag, label with the date, and presto! You’re done! 😉
You can use frozen cucumbers to make tzatziki sauce or even smoothies. Never be afraid to experiment!
