Say Hello to No-Fuss No-Muss Mealtime!

Passed down to us by my great grandmother, this casserole is one of my all-time make-ahead dinner favorites! It’s super simple to make—keep reading to find out how!

Or…if you really want to cut to the chase–here’s the printable version:

Ingredients:

  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 3/4 c. minute rice (white or brown, whichever you prefer)
  • 2 cans chop suey vegetables (I use La Choy)
  • 2 cans cream of mushroom soup
  • Chow Mein noodles (for topping)

To start, brown the ground beef with the onions, draining off any grease once it’s finished.

Next, dump the beef and onions into a large mixing bowl, followed by the instant rice, cream of mushroom soup, and veggies. Then mix that cookie up! 😉

Once it’s mixed, dump the contents into an 8 by 8 by 2 (or similar size) casserole dish (no need to grease it), pop it in the oven at 350 F for 1 hr., and shazam! Instant dinner! 😀

Chow Mein noodles make an awesome topping–but personally, I think it’s just as good without them!
