I’ll admit, this recipe looked/sounded pretty strange when my grandma first shared it with us. But to my surprise–I actually found I liked it! And not only that, my little brothers and sisters enjoyed it as well! Just goes to show; I guess you never know till you try… 🙂
My grandma got this healthy recipe from a friend who brought it for Thanksgiving last year. So if you’re reading this…here’s a big thank you from me! ❤ You can get the printable version of the recipe below:
- 1 can cut green beans
- 1 can peas
- 1 small jar chopped pimentos
- 1 can shoe-peg corn
- 1 TBSP salt
- 3/4 cup sugar
- 4 large stalks celery
- 1 large bell pepper
- 1 onion
- 1/2 cup vegetable (or Mazola) oil
- 1 cup vinegar
- A dash or two of paprika
Dice your celery, bell pepper, and onion; drain your canned veggies; and blend all your ingredients together.
Pop the whole kitten caboodle in the fridge for 12-24 hours, and voila! 😉 You’ve got yourself a yummy, healthy side dish!
The flavor of the salad reminds me of salsa…it’s actually quite good!
