Marinated Veggie Salad

I’ll admit, this recipe looked/sounded pretty strange when my grandma first shared it with us. But to my surprise–I actually found I liked it! And not only that, my little brothers and sisters enjoyed it as well! Just goes to show; I guess you never know till you try… πŸ™‚

My grandma got this healthy recipe from a friend who brought it for Thanksgiving last year. So if you’re reading this…here’s a big thank you from me! ❀ You can get the printable version of the recipe below:


  • 1 can cut green beans
  • 1 can peas
  • 1 small jar chopped pimentos
  • 1 can shoe-peg corn
  • 1 TBSP salt
  • 3/4 cup sugar
  • 4 large stalks celery
  • 1 large bell pepper
  • 1 onion
  • 1/2 cup vegetable (or Mazola) oil
  • 1 cup vinegar
  • A dash or two of paprika

Dice your celery, bell pepper, and onion; drain your canned veggies; and blend all your ingredients together.

Pop the whole kitten caboodle in the fridge for 12-24 hours, and voila! πŸ˜‰ You’ve got yourself a yummy, healthy side dish!

Colorful veggies=yummy+healthy!

The flavor of the salad reminds me of salsa…it’s actually quite good!
