Lasagna–that classic, oh-so-yummy, melt-in-your-mouth, authentic Italian goodness. What’s not to love!? ❤ But perhaps the best part about lasagna is that it usually lasts for two meals around my house…I mean, sometimes it’s nice to have a night off, right? 😉
Anyways, I digress; let’s cut to the cheesy chase! I confess I have no idea where this recipe came from. It’s another one of those just-wrote-it-down-on-an-index-card-at-some-point (yes, that’s a word) recipes. The author has my sincere thanks! Click below to get the printable version:
Meat Sauce Ingredients
- 1-1 1/2 lb. ground beef
- 28 oz. can diced tomatoes
- 12 oz. can tomato paste
- 2 tsp. garlic salt
- 1 1/2 tsp. oregano
- 1 tsp. basil
Other Filling Ingredients
- 1 cup cottage cheese
- 1/2 cup shredded Parmesan cheese
- 16-20 oz. shredded mozzarella
- 1 lb. oven-ready lasagna noodles
Throw on an apron and let’s spend the evening together! 😀 We’ll start by browning the ground beef and draining out any grease. Then we’ll toss in all the other meat sauce ingredients, stir em’ up, and simmer our mess for about 20 minutes.
While that’s cooking, we’ll mix the cottage and Parmesan cheese together and set it aside.
When the meat sauce is finished, we’ll grab a 9 by 13 pan and put down a layer of lasagna noodles, overlapping the edges slightly. We’ll follow it up with half the meat sauce, and top that with half the cheese mixture we made earlier. The cheese mixture doesn’t exactly spread though, so we’ll just kind of splatter it on in clumps. It doesn’t have to be an even layer. Anyways, after that we’ll take half the mozzarella and sprinkle that on…and repeat the process!
Sorry there’s no pictures of the layers–we were currently experiencing a killer 4:00 nanny hour at the time and I didn’t have the chance to whip out the camera. 😦
Then we’ll toss our work of art into a 350 F oven for 45 minutes, take it out to set up for about 15 minutes or so–and relish every bite! Now that’s what I call the fruits of labor! 😉
