I don’t know about you, but I LOVE one pot dinners. Instead of juggling several different parts of a meal on the stove, you can focus all your attention on just one pan! Oh yeah. And this is definitely one of my all time favorite one pot meals. So many vegetables…it just makes me feel so healthy, LOL! But don’t be scared of the veggies–really, the flavor is amazing. 😉

Serve with a breadstick, maybe even a salad…and you are good to go girl (or bro, lol)!
One thing I will note though, if you use frozen veggies, you’ll want to cut back on the chicken broth a bit so things don’t get too soupy. Also, (I promise, this is the last thing) if you let it sit for a few minutes with the lid on after you turn the heat off it will help steam off any excess moisture.
