Spanish Rice

This little baby will turn any Mexican meal into a really awesome Mexican meal. It’s just so stinkin’ good! 🙂 And you’re not going to believe this–but it only uses 4 ingredients.

OK, now guess where this recipe came from. You got it! I have no idea. It’s another one of those index card mystery recipes. But, I guess origins don’t matter much when your talking about tastiness…so without further ado, let’s get cooking! Get the printable version of the recipe below:


  • 1/2 cup white rice
  • 1/2 tsp. minced garlic
  • 1 c. water
  • 1/2 c. your favorite salsa

Alright amigos! Start by mixing all the ingredients together in a small saucepan.

Then bring to a slight boil on the stove…

Give it a quick stir, pop the lid on, and let that cookie simmer for about 20 minutes.

Once it’s done, take it off the heat and let it sit for about 5 minutes or so to let the excess moisture steam off.

Then, fluff it with a fork, and serve with your favorite Mexican dish! We usually eat it with our homemade burritos.
