I love simple recipes. Can I say that too many times? They’re just so nice for those busy weeknights! And this recipe will make Mexican night a breeze–trust me. 🙂
This is another one of those mystery written-down-on-an-index-card-by-somebody recipes. So I guess we’ll never know who invented it…gracias to you if you’re the one! Get the printable version below:
- 1 lb. ground beef
- A 4 oz. can diced green chilies
- 2 tsp. chili powder
- 1 1/2 tsp. cumin
- 1/4 tsp. garlic salt
- A little fresh black pepper (or the pre-ground stuff, it doesn’t matter 😉 )
- 1/2 c. water
- 1/2 a 15 oz. can black beans, smashed (optional)
Let the fiesta begin! 😀 Start by browning and draining the beef, then add the chilies, spices, and water.
Mix it all together, and let it simmer until pretty much all the liquid has been absorbed–about 20 minutes.
And that’s it! Told ya it was easy! But if you don’t mind adding an extra step…black beans make an awesome addition to this dish. Not only are they yummy, but they also will bulk up the serving capacity, and they’re good for you too!
It’s very simple; start by draining and rinsing 1/2 a can of beans…
And throw them in your food processor. If you don’t have a food processor, throw them in the microwave for a minute or so to make them more pliable; then smash them with a fork. A little more labor involved this way, but not too bad! 😉
You can add the beans at the same time as the chilies, spices, and water; or you can add them after the simmering process–it doesn’t matter much.
There you have it! Throw a little filling in a tortilla with some cheese and veggies…maybe even fry it to make a chimichanga…whatever you like best.
